Meringues are for sure my “real love”; sugary, crunchy deliciousness and a must in the kitchen. They are very simple but yet tricky to dominate and therefore people starts messing up with weird things like “Cream Of Tartar”. Don’t worry! I’ve been baking meringues for a while now and, Okey, I don’t have my grandma’s experience, but… this recipes has worked every time for me and it only calls for egg whites, and sugar. + A few things to have in mind when making meringues are that “not very fresh eggs” work best, and having them at room temperature + adding a pinch of salt will make the whisking easier. Also, low and slow is the key not to ruin the meringues, they need long hours in the oven which usually feel like a never ending wait but, believe me, those hours will be soo worth it…
